Clean Shrimp Scampiposted by Jennifer
It is hard not to crave guilty pleasure dishes, after all we are all human. I love shrimp scampi and had to find a way to make a clean shrimp scampi. This dish is so quick and easy to throw together. Its a dish where you will want to always have the ingredients on hand and in your freezer. This shrimp scampi will impress your guests and shock them that is it a healthy version! My family loves it and I know yours will too!
You Will Need:
1 1/2 lbs uncooked, peeled, and deveined shrimp
1lb Brown Rice Pasta, I use the elbow pasta but you can use spaghetti or angel hair if desired
1 tsp finely chopped flat leaf parsley
8 cloves of garlic
1 large lemon juiced
1 cup chicken stock
1/2 cup white wine, cheap cooking wine
1 TBS pasta water to thicken
Start pasta and cook according to directions. I leave my pasta al dente as it slightly continues to cook when you add it to the sauce and nothing annoys me more than falling apart pasta!
Finely chop garlic and add to a sauce pan.
Add shrimp to the same pan as garlic and cook together until shrimp is cooked through and pink. At this point I season the shrimp with salt and pepper Then remove the shrimp and place in separate bowl.
In the same pan you cooked the shrimp and garlic in add the chicken stock, wine, and lemon. Let simmer for about 5 min. At this point your pasta should almost be finished cooking so before you drain it take a spoon and spoon some of the pasta water over to your sauce pan. Then go ahead and drain the pasta.
Once the sauce has simmered for a bit add back the shrimp and toss in the pasta. Finely chop the parsley and sprinkle over the noodles and shrimp. Mix until all the pasta and shrimp are coated with the sauce!
Serve hot right out of the pan! This dish is so quick and so delicious! I hope you all enjoy it as much as my family does!
