If anybody knows me, they know how much I LOVE Pecans. I grew up watching my granddad shuck pecans from his pecan trees while watching baseball every night. My grandma incorporated pecans into everything! Since our lifestyle change doesn’t involve many baked goods, we have been learning to get creative and come up with some alternative healthier recipes to curve that sweet tooth of ours. Pecan Pie Cupcakes have become one of my son Stone’s specialties. Stran has hiding places for these cupcakes so no one will steal his stash. It has become a household joke…. who can find his pecan pie cupcakes! You will surely love these as much as we do! They are so easy to make and are so scrumptious!
Pecan Pie Cupcakes
- 1 cup chopped Peacans
- 1/2 cup oatmeal flour
- 3/4 cup Truvia Baking Blend Sweetner
- 1/4 cup molasses
- 2/3 cup butter, melted
- 2 eggs
- pinch of sea salt
Mix all ingredients together until fully incorporated. Preheat the oven to 350 degrees. Grease small muffin tins. Fill each tin until about 3/4 full. Bake for 18- 20 minutes. Thats all there is to it! So simple!
