Healthy Protein Ice Cream Sandwichesposted by Jennifer
All these HOT HOT days we have been having made me start to brainstorm how I could make a dessert that was 1) cool 2) scrumptious 3) on the healthy side. I am a huge fan of ice cream sandwiches, but they are so packed full of sugar its almost not worth it. So then I got to thinking that I have a healthy less sugary version of chocolate chip cookies and a recipe for protein ice cream, why not put them together? Duh right?! The healthy protein ice cream sandwiches were born! The cookies are made with oat flour so they have an oatmeal cookie taste which I’m obsessed with! And the protein ice cream is made with sugar free protein powder and you add truvia so it is already ahead of the game! My kids DIED over these and I know anyone you share them with will too!
Chocolate Chip Cookies:
- 2 1/2 cups Oat Flour (can also use brown rice flour or quinoa flour)
- 1 1/2 tsp Baking Soda
- 3 TBS Coconut Oil
- 3 TBS Unsweetened Apple Sauce
- 2 TBS Truvia Baking
- 2 TBS Splenda Brown Sugar
- 1 tsp Vanilla
- 1 Egg
- 1/4 cup Water
- 1/2 cup Semi-Sweet Chocolate Chips ( can add more if you wish)
Protein Ice Cream:
- 2 scoops French Vanilla Protein
- 2 cups Unsweetened Almond Milk
- 1 tsp Vanilla
- 4 packets Truvia
Start by making the ice cream so it has time to harden up. At least an hour before. Combine protein powder, almond milk, vanilla, and trivia. Mix until all powder is dissolved. I use my Magic Bullet to do this process. Pour your ice cream mixture into your at home ice cream maker and freeze until it is a nice frozen consistency.
Preheat your oven to 350 degrees F. Combine oat flour, baking soda, truvia, brown sugar, coconut oil, apple sauce, vanilla, egg, and water until fully combined together. Once mixed add in your chocolate chips.
Place tablespoon size scoops onto a nonstick or greased cookie sheet. Pat down cookies so they are flat. Bake for 8-10 minutes.
Let cookies cool COMPLETELY! Once cookies are cooled match together like size cookies for the perfect sammie. If you have made your ice cream hours ahead of time you may want to pull it out of the freezer and let it warm up just enough so that you can scoop easily. Scoop one rounded scoop full of ice cream and place it on the cookie. Take the second cookie and gently press together to smoosh down the ice-cream in between cookies.
Now at this point you can either instantly enjoy your ice cream sandwich or you can wrap them in plastic or wax paper and put in the freezer until later! Either way you are going to LOVE THESE!!!!
