Protein Blueberry Lemon Zest Muffins

I never pass up an opportunity to turn a meal or snack into something healthy and packed with protein. Quest protein has been one of my favorites for awhile and they make this amazing multi-purpose protein that you can use for baking. I decided to use this protein plus brown rice flour to make a gluten free protein blueberry lemon zest muffins! The blueberries plus the lemon undertones make for a great combination. So easy to make and a delicious snack or breakfast food for the whole family.

Ingredients:

1  cup Brown Rice Flour (can also use almond flour)

2 scoops Quest Multi-Purpose Protein Powder (or 2 scoops vanilla protein powder)

1 cup Gluten/ Wheat Free Rolled Oats

1/3 cup Splenda Brown Sugar Blend

1/3 cup Truvia Baking Blend

1/2 tsp Salt

1 cup Unsweetened Applesauce

1 Egg, beaten

1 Egg White

2 tbs Butter, melted

1 tsp Vanilla

1 1/2 cups Fresh Blueberries

zest of 1 Lemon

To Make:

Preheat oven to 350 degrees F. In a large bowl add all ingredients except the blueberries

Mix until fully combined. Then gently fold in blueberries so you do not break them up.

Line muffin pan with muffin liners or grease muffin tins. Fill each cup 3/4 the way full.

Bake for 30-35 min until the muffins are a nice golden brown on top.
