No Bake Pumpkin Protein Bites

Pumpkin, pumpkin, pumpkin everything!!! With two growing boys in the house and a girl who on some days can eat almost as much as them I am always looking for healthy snacks to keep around the house. These pumpkin protein bites are a great snack because they are not full of sugar and junk! They are easy to throw together and then just leave in the fridge for them to grab when they want! Who doesn’t love a snack like that? These will make a great snack to have in the house this holiday season while you’re entertaining family! No bake pumpkin protein bites everyone!!

What You’ll Need:

  • 1 Cup Oat Flour
  • 2 Scoops Quest Multi Purpose Protein (Could also use any vanilla protein as well)
  • 3/4 Cup Rolled Oats
  • 3 Tablespoons Truvia
  • 1 Tablespoon Pumpkin Spice
  • 1/2 Cup Pumpkin Puree
  • 1/2 Cup Almond Butter
  • 1/2 Cup Sugar Free Maple Syrup
  • 1 teaspoon Vanilla
  • 1/2 Cup Chopped Pecans
  • 1/2 Cup Sugar Free Chocolate Chips

To Prepare:

In a large bowl combine the flour, protein, truvia, and pumpkin spice and mix well.

In a microwave safe bowl add the maple syrup and almond butter. Microwave for 30 seconds and mix until combined. If the almond butter is not softening into the syrup you can heat for 15-20 seconds more. After the two are melted together mix in the vanilla.

Add the melted syrup, almond butter, and vanilla mixture to your dry ingredients bowl. Fold the two together until there are no dry spots left

After the ingredients are fully mixed add your rolled oats, pecans, and chocolate chips and mix well!

Once the ingredients are mixed use your hands and form the batter into small bite sized balls. At this point it is optional to roll the bites in a mixture of cinnamon and Truvia. They are good with or without!
