Roasted Sweet Potatoesposted by Jennifer
This Thanksgiving season I decided to share my healthy version of the traditional sides you love to enjoy! Sweet potatoes are a staple in my house! We eat them all the time. And there is nothing I love more with my Thanksgiving feast than those sweet and savory sweet potatoes. So I came up with this recipe that still is sweet and savory but a little more friendly on your waist line! Give these a try and I promise they will be your new addiction!
What you’ll need:
- 5 Large Sweet Potatoes
- 1/4 cup Sugar Free Maple Syrup
- 1/4 Cup Honey
- 1 Tablespoon Cinnamon
- 1 Table Spoon Salt
- 1/4 teaspoon Cayenne Pepper (optional but worth it!)
- 1/2 teaspoon Pepper
Preheat oven to 375 Degrees F. Cover a large baking sheet with foil and spray with nonstick Cooking spray.
Dice up sweet potatoes into cubes. Its ok if they aren’t all small. Just so they are cubed. Put on baking sheet so they are all laying flat.
In a small bowl mix cinnamon, salt, cayenne, and pepper.
In another small bowl mix the honey and maple syrup.
Now for the messy part! Drizzle the honey/syrup mixture over the sweet potatoes and then toss with your hands until fully coated. If you feel like they are fully coated and there is still some honey/syrup mixture left thats ok. Sometimes you use more sometimes you use less.
Sprikle the seasoning mixture over the sweet potatoes until the tops are well coated then toss with your hands again. Once tossed repeat that last step over. So you will season the potatoes twice.
Put sweet potatoes in oven and back for 20-25 minutes until they start to brown.
These are so scrumptious I know your whole family will gobble them up this Thanksgiving!
